Print Options:

Focaccia with Durasoft & Ultra 55%

Ingredients:
 5000 g Flour DURASOFT
 5000 g Flour Ultra 55%
 200 g Sugar
 250 g Yeast
 200 g Salt
 300 g Margarine or (vegetable) oil
 ≈ 6300 g Water
Procedure:

Mix all the ingredients to well-developed dough for 5’ at slow speed and 6' at fast speed.
The dough should be soft.

Rest for 20 minutes.

Then make heads and let them rest for 20 minutes.

Fold out the focaccia, garnish them with sesame and proof at 37° C with 70-80% H for 35’
(approx.).

Bake with steam at 210° C for 35’ approx.
